THREE-INGREDIENT CHOCOLATE BARS- CLEAN EATING

I am in love with this recipe! So easy and made with ingredients you can feel good about. I am still enjoying all my local honey that I have stored up from my Hutterite friends and I chose to use it in this recipe but the recipe is versatile so use whatever sweetener works best for you. There is a underlying coconut flavor which I love and thought it was even better with toasted coconut flakes.

THREE-INGREDIENT CHOCOLATE BARS- CLEAN EATING

1/4 cup cocoa powder
1/4 cup unrefined organic coconut oil (melted) -no substitute
1 Tablespoon pure honey, agave or pure maple syrup,
        (Sugar Free option:  NuNatural vanilla stevia drops: use this ratio instead: 1/2 cup +
        1 Tablespoon cocoa powder, 1/4 cup coconut oil, stevia drops to taste.)
optional: toasted coconut flakes, extracts, cocoa nibs, or other add-ins
optional: 1 extra tbsp oil or water, if it needs to be thinner


Here are my toasted coconut flakes...I toasted at 350 degrees for 7 minutes, stirring frequently.

Combine coconut oil with the liquid sweetener or stevia drops. Stir, then add cocoa powder. Stir stir stir!
Pour into any flat container (or candy molds or smash between layers of wax paper or in ziploc bags).

I used a mini muffin tin because the only chocolate molds I have are race cars from my son's last birthday. Next time I am out shopping I am going to buy actual chocolate bar molds. The muffin tins worked ok but I had to use a sharp knife to free each piece after they were frozen. Plastic molds release easier.

Freeze until solid, and store in the freezer.

Once hardened, you can also opt to melt the bars again for chocolate sauce. Or chop them up for healthy 100% sugar-free chocolate chips! (If you use the stevia option, these bars are sugar-free.)

Do you have to use coconut? I hate coconut! !

You have to use coconut oil but not the coconut flakes.
