CHICKPEAS AND ROASTED RED PEPPER DIP- CLEAN EATING


Chickpeas and Roasted Red Pepper Dip- Clean Eating
Adapted loosely from Smittenkitchen
 
1 15-ounce can of chickpeas, drained and rinsed
1 small jar roasted red peppers, or about 1 cup, drained
2 garlic cloves, minced (I use roasted garlic)
Juice from half a lemon
Salt and pepper to taste
 
Puree everything in a food processor until smooth. Add a little olive oil if it is too thick.
Serve with pita chips, chips or raw vegetables.


RAINBOW STAR CRAYONS
This was a fun (and messy) craft I did with the kids. We made rainbow crayons with old crayons pieces and a silicone star-shaped ice mold...
You will need:
5 metal cans (one for each color)
mold - I used a silicone star shaped ice mold
crayon pieces - ask preschool teachers
 
I made 10 rainbow star crayons with about 55 crayon pieces. I used one metal can which was a mistake because the colors blended so make sure you have one can for each color in your rainbow.
 
I also found it was hard to get the wax into the points of the star-shaped mold before it dried so using a heart shape or round shape mold may be easier.  
Peel the paper off the crayons. The easiest way to do this is score the paper with a sharp knife right down the side of the crayon and it will peel right off.
Next, boil some water in a small pan. Put the group of red crayon pieces in the metal can and set in the pan with hot water. I used a wooden Popsicle stick to stir the crayons. Once the wax is melted, pour into the mold. Repeat the process for all the colors. Make sure each layer in the mold is dry before you add another layer. Let sit for a few hours until completely dry and cooled. I was impatient and we got to work coloring right away with warm crayons!

I though at first it was a think soup...but I like the dip...the crayons are so creative...just like you my dear...
