TACO SALAD WITH HOMEMADE TACO SEASONING

This is a simple recipe for homemade taco seasoning which is always nice to have on hand, especially when you have had a busy day and it calls for taco night. I always add black beans to taco meat because it adds protein and stretches the meal so it leaves me with leftovers for tomorrow. 

TACO SALAD WITH HOMEMADE TACO SEASONING
Adapted slightly from Alton Brown
Serves 4

1 lb Ground Sirloin or Ground Buffalo (organic & grass-fed)
2/3 cup beef broth or water
1 can of black beans, drained and rinsed
corn on the cob, cooked and cut off
cheddar cheese, shredded
avocado, cubed
mixed greens
tomato, chopped
onion, chopped
cilantro, chopped
salsa (optional)

Taco Seasoning:
1 tablespoons chili powder
1/2 tablespoon ground cumin
1 teaspoons kosher salt
3/4 teaspoons hot smoked paprika
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper


Note: Make sure you use kosher salt, if you use regular table salt use less. If you want more flavor double the taco seasoning mix.

Mix your dry spice taco seasoning ingredients.


Saute the meat in a pan over medium high, break up the meat into small pieces and cook until the meat is no longer pink, about 5 minutes. Drain the meat in a colander and rinse with water. Put back into the pan and add the beef broth or water and the taco seasoning. Stir and bring to a simmer over low heat. Keep skillet uncovered and stir frequently to break up the meat completely. Simmer until the liquid has reduced and thickened, about 5-10 minutes. Add the black beans to the meat.


Assemble your salad and enjoy!

B-29A Superfortress "FiFi"- one of the few surviving in existence and the the only one flying today. A lucky and rare sighting of this B-29 was discovered in the 70's at the US Navy Proving Ground in California; being used as a missile target. She was rescued and restored for $3 million.

ARTICHOKE-OLIVE TAPENADE ON CROSTINI


When I was a kid my dad's drink of choice was gin and tonic with green olives. If I was especially lucky or when he wasn't looking I would get those green olives at the bottom of the glass. I can still remember that piney, salty, bitter bite of those olives and I have loved them as long as I can remember. If you have a taste for olives you will love tapenade. It is so easy to make and has such a unique flavor that will have you going back for more. 

Artichoke-Olive Tapenade On Crostini
Adapted from smittenkitchen and keepinitkind
Makes about 1 1/2 cups


1 garlic clove, peeled and smashed
1/2 cup green olives, pitted and rinsed
1/2 cup black olives, pitted and rinsed
1 tablespoon capers, rinsed and drained
1 15-ounce can of artichoke hearts, drained
Fresh parsley, roughly chopped
8 large slices of crusty bread


Note: I use 1-2 teaspoons of chopped roasted garlic instead of raw


Preheat the oven to 400°F.

In a food processor, process the garlic, olives, capers, artichoke hearts to a coarse paste. Add a little olive oil if it is too dry to form a paste. Note: I did not need it.

Toast the bread on the oven rack for 6 minutes, or until crisp and toasted. Spread the olive paste thickly over the toasts and serve.

Do ahead: The olive paste can be refrigerated for 2 days. Let it return to room temperature before using.

Tapenade is excellent on fresh bread, toasted pita triangles, crackers, tossed with pasta, on a sandwich or pizza, with carrot sticks, added to a wrap, or just plain on a spoon!

STRAWBERRY ICE CREAM


I did something bad...very bad. I bought an ice cream maker. As many of you know ice cream is my kryptonite. I completely justified the purchase after reading the ingredients in what I thought was "healthy" ice cream. I was wrong. So I figured if I am going to indulge in ice cream, I at least want to know what the ingredients are.

Last month strawberries were ripe for the picking everywhere. We found a favorite patch about a thirty minute beautiful drive away...

In the patch...I think my fingers were stained red for about two weeks!


Strawberry Ice Cream
Adapted from Epicurious
Makes 1 1/2 quarts

1 pound strawberries trimmed, halved if large

3/4 cup white sugar
3/4 teaspoon fresh lemon juice
1/8 teaspoon salt
1 cups whole milk
1 cup heavy cream

* Ice Cream Maker

 
Coarsely mash strawberries with sugar and salt using a potato masher in a large bowl. Let stand, stirring and mashing occasionally, 10 minutes.

Transfer half of strawberry mixture to a blender and purée with cream until smooth. Return strawberry cream to bowl with remaining strawberries and chill, stirring occasionally, until very cold, 3 to 6 hours.

Freeze mixture in ice cream maker. Transfer to an airtight container and put in freezer to firm up. Fresh mint tastes delicious when served on the ice cream.

ANTI-INFLAMMATORY JUICE


For all of you out there with aches and pain, here is a list of some anti-inflammatory foods:

Pineapple contains the enzyme, bromelain that helps dissolve the waste material that may have accumulated in the joints and aids in the healing of indigestion, sports injury, trauma and other kinds of swelling.

Grapefruit contains organic salicylic acid and is one of the most valuable fruits for dissolving inorganic calcium which may have settled in the cartilage of the joints.

Apples have been shown to reduce inflammation through their polyphenol content. These polyphenols may have a protective effect on exercise-induced muscle damage.

Ginger has anti-inflammatory properties that reduce pain of arthritis.

Parsley is rich with an antioxidant arsenal that includes luteolin, a flavonoid that searches out and eradicates free radicals in the body that cause oxidative stress in cells. Luteolin also promotes carbohydrate metabolism and serves the body as an anti-inflammatory agent. Along with luteolin, the vitamin C found in parsley serves as an effective anti-inflammatory agent within the body.

Other anti-inflammatory foods include:
Blueberries, broccoli, carrots, celery, cherries, cucumber, EVOO, green tea, kelp, papaya, shiitake mushroom, sweet potato, turmeric, wild salmon.

ANTI-INFLAMMATORY JUICE

1/3 pineapple
1 grapefruit
1 apple
1/2 inch of ginger
bunch of parsley

Put all your clean organic produce in your juicer and juice.
 Pour over ice and drink immediately.
 
My indoor window herb garden: mint, basil, thyme and rosemary...
 
I haven't seen my friends from the Hutterite colony since last fall. We talked a few times during the winter, mostly about their bees and how this was the first year they shipped them away for a winter "vacation". Bee keeping has always intrigued me. The bees were sent to pollinate the almond groves and grape vineyards in California. Just a few weeks ago, to everyone's delight, the bees arrived safely back to the Hutterite colony.

The other day they were in town and surprised me with some fresh picked asparagus and honey...they know the way to my heart!

She also lent me one of her favorite cookbooks, which has been fun going through. The recipes' measurements are sized for the colony; I can't imagine cooking with that amount of food! I love how nothing goes to waste, from chicken fat in cookies to pig heads in dumplings!

My niece, kids and dogs all rode with me to meet them. In their colony they are not allowed to have dogs. They have tried in the past but apparently it never works out well. I love seeing their faces when I pull up with the dogs in the car...the boys' faces read pure joy and her face reads pure disgust! They might as well be cows or pigs or any other dirty farm animal in her opinion. I get a kick out of telling her how they sleep in bed with us!
 
We live such different lives and we both love indulging in each other's. The other day she laughed so hard when I told her I was in the drive-thru ordering a coffee. She doesn't know it but she keeps me grounded. Her lifestyle reminds me there is an art to everything in life and it is important to take time to slow down and enjoy it.

MAPLE CINNAMON ALMOND BUTTER- CLEAN EATING (PALEO)

 My favorite after school snack with the kids! 

Maple Cinnamon Almond Butter- Clean Eating (Paleo)
Adapted from multiplydelicious
Makes 1/2 cup

1 cup roasted unsalted almonds
1 tablespoon coconut oil, melted, plus more if needed
3/4 teaspoon ground cinnamon
1/2 tablespoon maple syrup, at room temperature
¼ teaspoon sea salt

In the bowl of a food processor add almonds and process until mixture makes an almond meal texture. Add coconut oil, cinnamon, maple syrup and sea salt; process until the mixture forms a smooth creamy mixture that resembles almond butter. This will take a few minutes. When the mixture balls up, stop, stir and keep processing in your food processor until smooth. If the butter is not coming together after a few minutes of processing add a little more melted coconut oil.

Enjoy this with apple slices or just by the spoonful. 

Keep refrigerated for up to a month.

THE ORIGINAL THIN MINT- CLEAN EATING

My husband brought me home a bag of fresh mint the other night...it might as well have been a bouquet of flowers! I opened the bag and breathed in: crisp, cool and fresh. I love mint and even more when it is dipped in dark chocolate.

This is the best little dessert...unique and refreshing...a perfect end to your meal or a quick bite-sized snack.


The Original Thin Mint- Clean Eating
 
25 mint leaves
1.5 ounces dark chocolate
2 tablespoons coconut oil

Gently clean the mint leaves and pat dry. Line a baking sheet with parchment paper and set the mint leaves out on the parchment paper and freeze for about 20 minutes.

Melt the chocolate and the coconut oil in a double boiler. If you don't have one just fill a pan with about 1 inch of water and bring to a simmer, set a metal bowl or another pan over the pan simmering with water and melt the chocolate and oil in the bowl/pan making sure not to let water or steam touch the chocolate. Stirring constantly until the chocolate is melted. Turn off heat and dip the mint leaves. The chocolate should harden almost immediately. Set the chocolate dipped leaves back on the parchment paper and store in the freezer.
