I think this deserves some major attention...
The US Dairy Industry: The International Dairy Foods Association (IDFA) and the National Milk Producers Federation (NMPF) have petitioned the FDA to approve aspartame as a hidden, unlabeled additive in milk, yogurt, eggnog and cream. Claiming this will benefit our children.
This frustrates me for many reasons: there are numerous people who are allergic to aspartame, many more don't want to consume chemicals but the most infuriating part of all this is the IDFA and NMPF trying to claim that this is all for the health of our children.
They argue that currently the "nutrient content claims such as "reduced calorie" are not attractive to children, and maintain that consumers can more easily identify the overall nutritional value of milk products that are flavored with non-nutritive sweeteners if the labels do not include such claims. Further, the petitioners assert that consumers do not recognize milk -- including flavored milk -- as necessarily containing sugar. Accordingly, the petitioners state that milk flavored with non-nutritive sweeteners should be labeled as milk without further claims so that consumers can more easily identify its overall nutritional value." -Read the entire petition here.
So basically, the IDFA and NMPF are looking out for the best of  your 5-year old child in kindergarten. They feel your child (who can't even read yet) will find the words "containing aspartame" on his chocolate milk a less nutritious option compared to white milk so therefore the IDFA and NMPF should be allowed to disregard any chemical sweeteners from the label. That way all our kids can keep consuming their chocolate milk loaded with chemical sweeteners every day at lunch and stay "healthy".

Here's an idea that would solve all the issues...REMOVE CHOCOLATE MILK FROM SCHOOLS!

You have until May 21, 2013 to let the FDA know what you want them to do. Please go to the FDA's website and give them your opinion on if they should allow aspartame along with other chemicals to be added to our milk and remain unlabeled.
Ok, onto more happy topics, pineapple whip...

The time was coming to an end for last of the three pineapples that I bought...
I decided to juice half and cut the other half into chunks and freeze for later use. Well, that lasted about 12 hours because the next morning I thought of the one ingredient banana ice cream recipe and wondered if it would work on pineapple. It does, well with a little help of coconut milk!

You will need a food processor or Vitamix for the desired consistency in this recipe. Don't attempt on a regular blender because you will most likely break it.

This is hands down my new favorite dessert.

Serves 1

8 Frozen pineapple chunks
1/4 cup coconut milk
Toasted coconut flakes (optional, but highly recommend)

Toast the coconut flakes if you are using. Preheat the oven to 350 degrees. Spread coconut flakes on a cookie sheet. Toast for 5-8 minutes, stirring frequently. They will smell nutty and be a golden brown when they are done. Make sure you keep a close eye on them, they burn easy.

Sometimes I feel like I am the only one in the world without a Vitamix...I want one so bad but I don't dare ask my husband for another kitchen appliance. (And yes, honey, I am dropping a major hint if you are reading this!) Luckily, my food processor works great for this recipe.

Blend the pineapple chunks and coconut milk for about 5 minutes in a food processor, stirring frequently. Make sure all the pieces are blended. It will get creamier as you blend. Add more coconut milk if needed, very little at a time.

Scoop out and put in a bowl. Delicious on its own but even better with...
 toasted coconut flakes.
 Perfect after school snack!
