PORTABELLA MUSHROOM BURGER- CLEAN EATING

I love mushroom burgers. They are so easy to make and both my kids love them, especially when they don't know they're mushrooms! You see, they both DESPISE mushrooms, probably one of the only things my daughter doens't like and just another thing on the very-long-list of things my son doesn't like. My daughter was half way through eating her "burger" and it fell apart on the plate. I wish you could've seen her horror..."Is this a giant mushroom!?" Thankfully, she has decided that mushrooms are not as disgusting as she once thought!

PORTABELLA MUSHROOM BURGER- CLEAN EATING
Serves 3

6 medium portabella mushrooms, stems trimmed
2 tablespoons balsamic vinegar
1 tablespoon olive oil
3 cloves garlic, chopped
chopped shallot
sea salt
cracked black pepper
whole wheat buns

Garnishment Options:
lettuce leaves
tomato slices
Red onion
avacado
roasted red peppers
fried eggs
bacon
sky's the limit...whatever you like!

Preheat the oven to 400°F and line a baking sheet with foil.

Clean the mushroom and remove the stems.

Combine balsamic vinegar, olive oil, garlic, shallot,  pinch of sea salt and few turns of a black pepper mill and mix well to create a marinade.

Drizzle generously over the portobello mushroom gills. Let it sit for 15 minutes.

Place the marinated portabella mushrooms gills side up in the oven and bake for 10-15 minutes.

Toast the buns with a little butter or oil on them for a few minutes in the hot oven if you want them crunchy. Assemble your mushroom burger with whatever garnishmets you like.


We also made oven fries which were awesome and I will post the recipe for next.

While I was cooking this girl was about 15 feet away from me busy eating her dinner.

Portabella Mushrooms make the best burgers! I can't wait to try them with this vinaigrette!
